Fillo pastry is a kind of “not when I am in the rush” thing, but with a few tricks you can have delicious bites in a relatively short time. Here are my “tricks”: 1) spray oil instead of brushing butter on each sheet (which also makes your recipe lighter), 2) lay together more than one sheet instead of working one at a time, and 3) opt for simply folding the pastry in pockets instead of forming more elaborated shapes. Here are my pockets with smoked mozzarella, radicchio and pears.

A work day at home with a quick green break

To make the better use of fresh spinach, it is a good habit to separate the smaller more tender internal leaves to be eaten raw in salads, and cook the external thicker ones. So I did. Rich, healthy, and quick. Enrich your spinach leaves with raisins, walnuts, pine seeds, blue or gorgonzola cheese if you like, and dress with a simple vinaigrette of 1 tsp extravirgin olive oil, 1 tsp balsamic vinegar, 1 tsp honey, one pinch of salt.

Evviva!! My first veggie burger!

I love veggie burgers and I have desired for a long time to prepare some myself. I didn’t want to use beans and mushrooms, but edamame and some cereal that I had at home in great quantity. I chose some recipes from the internet and I changed and combined ingredients and proportions according to my tastes. The result was this colorful, healthy and really tasty burger. The following ingredients make 12 4″ burgers.

Zuppa di lenticchie


Beh ammettiamolo,  dopo le feste ci sentiamo tutti un pò più grassi, anzi diciamo che abbiamo veramente acquistato quel paio di chili che faticosamente avevamo cercato di buttar giù in palestra… oddio sembro la Lambertucci 😉 Dunque ci toccherebbe andare un pò di magro nelle prossime settimane. Insalate, zuppe, carni bollite e pesce in bianco saranno i miei compagni, e i vostri? E siccome “leggero” non vuol dire “poco saporito”, coraggio e casseruole contro il chilo di troppo!

Minestrone all’italiana

The first of many “comforting” warm soups of the coming winter.  Minestrone all’Italiana is a healthy, rich and light main course, very easy to prepare. It has a lot of variants in the different Italian regions. This is a very basic and “standard” recipe, I mix it with rice, but you can change the ingredients with your fantasy and on the base of the season and produce available. Many variants of vegetables soups and minestrone will take us over the coming cold season!
