Schiacciatina with potatoes

Fast and cheap it doesn’t mean in any way less tasty or less healthy. Well, this is probably the philosophy of Italian cooking, think at how tasty, nutritious, and cheap is a homemade dish of pasta… Potatoes, olive oil, flour and water, are the simple ingredients that allow you to easily prepare this beautiful appetizer or dinner. I promise that it will be very appreciated by everybody.

2 medium sized potatoes (ca. 400 g)
350 ml water
200 g flour
40 g parmigiano cheese
30 ml olive oil
2 teaspoons salt
pepper, thyme, rosemary

First mix water and oil, salt, pepper, and herbs. Add, sprinkling, the flour and mix it well. You want a light and liquid dough. Add the potatoes sliced in very thin slices. Mix and put the mixture in a baking pan of about 11×17 inches. With the back of a spoon expand the mixture in the pan and try to make an even layer.
Bake for about 30-35 minutes in preheated 390°F oven. You can cut the schiacciatina in small squares and serve it as appetizer with salame and cheese. Well, it is also a nice dinner rich enough…
